By Mediterranean Book
Published: January 26,2012

Summary: This pork dish is simple to prepare, and quick to cook. With only a few ingredients, this is a wonderful meal when you feel like spending more time at the dinner table than over the stove.

Ingredients

  • 3/4 pound, boneless butterfly pork loin chop.
  • Spices are minimal.
  • Just 2 teaspoons of dried rosemary, salt, and freshly ground black pepper.
  • 1/2 a cup of apple butter
  • 4 teaspoons of prepared horseradish
  • 2 tablespoons of apple cider vinegar

Instructions

  1. To prepare the pork, trim fat and sprinkle rosemary on either side , pressing it firmly into the chop.
  2. Place a nonstick skillet over medium heat and coat it lightly with olive oil spray.
  3. Cook the pork for 2 minutes on either side, sprinkling with salt and pepper to taste.
  4. Cover and cook for 2 minutes on medium-low heat.
  5. Your thermometer should read 160 degrees.
  6. Now, simply mix the apple butter, horseradish and apple cider vinegar thoroughly.
  7. Place the pork on dinner plates, and drizzle with juice from the skillet.
  8. Serve your seasoned apple butter on the side.

I’m confused, the prep time says 2mins, the cooking time says 2mins but the method implies 6mins of cooking and as a cook myself I wouldn’t have thought it possible to cook pork properly so quickly. Plus, what is APPLE BUTTER? Where is the recipe please?
Thanks.

Hi all Apple Butter is like a jam….you can usually purchase at your local grocery store. I get mine from a local health food store and it is absolutely delicious….

this sounds great, FYI – for those who don’t know what it is, I get my apple Butter at the local farmers market, from the same place you would go for homemade apple cider.

Can someone suggest a substitute for the horseradish? Hubby can’t eat it. Thanks so much.
P.S. I think Apple Butter is very similar to apple sauce and a delicious and light alternative to jelly or jam on biscuits or toast. My mother-in-law cans her own recipe, but I’ve also seen it grocery stores.
