Breakfast

1 slice toasted whole wheat bread with 1 teaspoon margarine
1/4 cup egg substitute or cottage cheese
1/2 cup oatmeal
1/2 cup skim milk
1/2 small banana

Lunch

(535 calories, 75 grams carbohydrate)

1 cup vegetable soup with 4-6 crackers
1 turkey sandwich (2 slices whole wheat bread, 1 ounce turkey and 1 ounce low-fat cheese, 1 teaspoon mayonnaise)
1 small apple

Dinner

(635 calories, 65 grams carbohydrate)

4 ounces broiled chicken breast with basil and oregano sprinkled on top
2/3 cup cooked brown rice
1/2 cup cooked carrots
1 small whole grain dinner roll with 1 teaspoon margarine
Tossed salad with 2 tablespoons low-fat salad dressing
4 unsweetened canned apricot halves or 1 small slice of angel food cake

Snacks

(Each has 60 calories or 15 grams carbohydrate. Pick two per day.)

16 fat-free tortilla chips with salsa
1/2 cup artificially sweetened chocolate pudding
1 ounce string cheese plus one small piece of fruit
3 cups lite popcorn

    How on God’s green earth can you recomend that diabetics or any people
    eat margarine! It is one small step from PLASTIC!!!

    Look it up in a search engine to find more information on margarine.

    Egg substitute??? This terrible information makes me question some
    of your other information.

    Real butter and real eggs are NOT the boogie men that popular opinion and companies
    with an agenda promote.

    Rye bread is better than whole wheat. Put delicious virgin coconut oil (spreads like butter)
    on it. Coconut is especially good for diabetics and for other problems. Look it up.

    That’s it. folks.

    Well, I could mention about skim milk–can’t get calcium unless there is at least 2%
    milk fat in it.
    Or, about artificially sweetened food. Haven’t you heard of Stevia that is completely natural?
    Or I could mention about the cons of canned food, especially fruits.
    AND CAKE!!!

    I agree with Leila. I was shocked and disappointed to see so much use of unhealthy food ingredients. Since when is margarine Mediterranean??? Use real food people. Organic vegetables, coconut oil, olive oil, rye bread. Leave the cake and canned foods alone. Mediteraneans use FRESH fruit for dessert, not canned or cake. That is reserved for special occaisions only. The regular Mediterranean diet menu looks much heathier than this diabetic one.
